1.    THE ZESTY THAI LEMON-LIME SHRIMP SAUCE:

INGREDIENTS:
  • 1 fresh red chilli, finely chopped, or ½ teaspoon dried crushed chili
  • 2 kaffir lime leaves, left whole, or substitute 1 extra teaspoon of lime zest
  • 2 tablespoons of frozen prepared lemongrass or fresh lemongrass, very finely chopped and minced (this is available in Asian Stores)
  • Juice of 1 lemon
  • 2 tablespoons of honey
  • ½ teaspoon shrimp paste (also available in jars at Asian food stores)
  • 3 tablespoons fish sauce
  • ¼ tablespoon turmeric
  • 3 to 4 tablespoons thick coconut milk
  • Zest of 1 lime (just about 1 tablespoon)
  • Generous handful of fresh coriander or cilantro  
NOTE: This sauce is good for 1 pound shrimp or 460 grams of raw shrimps, shells already removed for stir frying.

THE PROCEDURE:

Take a medium size bowl and whisk in together the lemon juice, the honey, the shrimp taste, the fish sauce, and the turmeric.  Stir them until they are smooth.  If you are using frozen lemongrass and dried crushed chili, you can add them to the mixture and continue stirring to mix them together.  Lastly, add the honey to the mixture and continue stirring until the honey is completely dissolved with the mixture.   Add the coconut milk and set aside for stir frying the shrimp.

2.    The famous sauce created for the stir fried shrimp combined with amaranth (beet greens), red pepper and cilantro recipe:

INGREDIENTS:
  • ½ cup of chicken or vegetable broth
  • 1 tablespoon of soy sauce or even a little more to taste2 tablespoons of Shao Hsing rice wine or just dry sherry
  • ½ teaspoon of sugar
  • 1 tablespoon of finely chopped fresh gingerroot
  • 1 teaspoon of cornstarch
  • 1 jalapeno or Serrano chiles, minced
THE PROCEDURE:


In a medium size bowl, combine the cornstarch, the 1 teaspoon soy sauce, the 1 tablespoon rice wine sherry and the 1 tablespoon of ginger.  Stir them together to mix until they smooth.  Add the chicken or vegetable broth to the mixture and continue stirring.  Then add the jalapeno or Serrano chiles, plus the sugar and continue stirring until they are fully mixed together.  This is now ready for your stir frying the shrimp and vegetables.

Stir fried chicken is always great for any family dinner.  For several recipes crawling in the web to day, there may be a special recipe that one family will adore and love once they have tried it cooking at their own kitchen.  Here is a simple chicken stir fry recipe that goes with linguini where our family finishes them down to the last piece.  

This succulent and flavorful dish is filled with the rich combination of chicken and vegetables that goes perfectly with the linguini noodles.  So let us start cooking them.  The original ingredients here can serve 4 persons and can be prepared quickly and easily.

INGREDIENTS:
  • 8 ounces whole wheat linguini noodles
  • ¾ cup low sodium chicken broth
  • 3 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • ¼ teaspoon red pepper flakes
  • 2 teaspoon cornstarch
  • 2 tablespoons expeller-pressed canola oil, divided into two
  • 1 pound skinless, boneless, chicken breasts or legs, cut them into small strips
  • 3 cloves of garlic, peeled and minced
  • 2 teaspoons fresh gingerroot, peeled and minced and chopped
  • 3 cups of small broccoli florets sliced coming from a large broccoli crown
  • 1 carrot, already peeled and chopped into thin strips for quick cooking
THE PROCEDURE:
  • Cook linguini according to package instructions, then drain them and please keep them warm too. 
  • Then combine the broth, the soy sauce, the vinegar, the pepper and the cornstarch in a bowl and mixed them until they are smooth.  Please make sure that the cornstarch is fully dissolved then set them aside.
  • To start stir frying, heat a wok or a large skillet over medium high heat over your American stove.  When hot, pour in a1 tablespoon of canola oil into the wok and wait till it is hot and starts to smoke.  
  • Then you can pour in the chicken strips and constantly stir fry them until they are lightly browned and almost cooked through.   The cooking time here is about 2 minutes only.  This time you can cooked the chicken strips in a batch only.  Then remove them from the wok and set aside.
  • Please add the remaining canola oil and heat the wok up a little.  Once hot again, add the garlic, the gingerroot and then stir fry them for only 30 seconds.  
  • You can now add the vegetables; the broccoli florets and the carrot strips and continue stir frying for about 2 minutes. 
  • Then you can add the soy mixture and the chicken and mix them well, then cover the wok.  
  • Please lower your heat to medium and let it simmer until the vegetables are crisp tender for another 3 minutes or so.  
  • Lastly, toss in the linguini noodles to the wok and mix them. 
  • Serve immediately while it is hot.  For some, they pour a little extra virgin olive oil for added taste to the dish.  But without it, the dish still tastes perfect.

Learning the art of cooking stir fries at home begins with simple traditional recipes that somehow show the simple steps of cooking stir fries to train the person how to perfectly prepare a stir fry dish.  By continuing to cook stir fried dishes, the person learns the technique and later innovate some steps to improve the dish according to his preference.  But the flavor and aroma of stir fries comes from the sauces.  Here we will share with you a multi-purpose stir fry sauces that can be prepared at your kitchen.  Preparation time is only 20 minutes, 15 minutes of measuring and preparation and 5 minutes of actual cooking.  This is a favorite stir fry sauce that makes enough for 2 meals.

THE THAI STIR FRY SAUCE:  This is great with chicken strips and vegetables.

INGREDIENTS:
  • 2/3 cup coconut milk
  • 2 ½ tablespoon fish sauce
  • 3 ½ tablespoon fresh lime juice
  • 1 ½ tablespoon soy sauce
  • 1/3 to ½ teaspoon dried crushed chili
  • 2 ½ teaspoon brown sugar
PROCEDURE:

 
 
Mixed all the ingredients in a bowl and stir to combine.  Make sure they are stirred well until they are smooth. 

TIPS:
  1. You can add cornstarch to thicken the sauce if you think it is too thin.  Simply combine 1 tablespoon of cornstarch with 3 tablespoons of water and stir until the cornstarch is dissolve.  Add a bit and cook until sauce thickens.  Add more if necessary.
  2. Consider using low sodium chicken broth and soy sauce to avoid an overly salty finished dish
  3. This sauce makes 1 cup of stir fry sauce and may be too much if you are stir frying a small amount of ingredients.  But you may need the entire sauce depending on volume of meat, the noodles and the vegetables as per your stir frying recipe.  However, you can add more sauce as necessary to have it as saucy as you like and even thicken it with the thickener as desired.  
  4. And lastly, if you prefer to mix the sauce with the stir fry ingredients in the wok, this is the most important moment of creating the sauce in the wok.  Pour in liquid just enough for you to see the sauce around the edges of the proteins and vegetables.  When the liquid begins to simmer, stir up the cornstarch mixture and pour a thin stream around the wok to mix with the sauce the sauce.  Stir the entire contents of the wok together immediately; the liquid will thicken away over a hot flame that is if you have only the right amount of sauce and cornstarch thickener on your sauce.  But you can adjust if necessary. (Note: Fantastic Chinese Restaurant Stir Fried dishes do only have enough sauce on the dish to coat and not to drown.  And a good Chinese Sauce is lightly only thickened and not so gloppy.)

With so much innovations and creativity in the stir fry business, it is sometimes good to go back to basics on the stir fry cooking.  Stir frying goes a long way back to the Chinese way of preparing dishes.  It is economical as well a quick and easy to solution to hungry people around the table.  One of the most long time favorite dishes in a Chinese Cuisine is the STIR FRIED CHICKEN WITH GARIC SAUCE.  A classic simple recipe in the Chinese kitchen, and now a popular take-out dish, this recipe is a great example of how garlic is used abundantly in the Chinese way of cooking. 

Fresh garlic cloves are chopped finely and then added to the hot oil in the wok to sizzle and provide the aromatic fragrance of the entire stir fried chicken.  Complementing the strong garlic flavor, are the aromatics of the freshly grated ginger, and the red chili flakes, and even white pepper, but not forgetting the toasted sesame oil that blends them all.  To add some color and sweetness and a fresh crunch to this recipe, we chose a medley of veggies such as snow peas, red onion, and the bell pepper.  And when they are in the fridge, we also can add in some broccoli, the baby corn, the cabbage, some carrots, the baby bok choy or even mushrooms.

Delicious and very well balanced, this stir fry recipe makes a perfect family meal.  So skip the unhealthy take-out and enjoy this Chinese dish at home with a bowl of rice.  The original recipe serves 3 to 4 persons.

INGREDIENTS:
  • 1 pound chicken breast, cut them crosswise into ½ inch thin strips
  • 1 teaspoon toasted sesame oil
  • ¼ teaspoon season with spice finely ground white pepper
  • 2 tablespoons vegetable oil, but we prefer peanut oil
  • 5 to 6 cloves of garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon season with spice red chili flakes
  • ½ cup roughly chopped red onion
  • 1 handful of snow peas, already trimmed
  • ½ red bell pepper, already cut into thin strips
  • 1 tablespoon lemon juice, freshly squeezed without the seeds
FOR THE SAUCE:
  • 1 tablespoon rice vinegar
  • 1 ½ tablespoon low sodium soy sauce
  • 1 tablespoon dark soy sauce
  • 2 teaspoons Chinese rice wine, or dry sherry (optional)
  • ½ teaspoon brown sugar
  • 1 tablespoon cornstarch
PROCEDURE:

  • In a large bowl, toss the chicken strips with toasted sesame oil and the white pepper.  Marinate them for at least 10 minutes.
  • In another small bowl, stir together the rice wine, the soy sauce, the dark soy sauce, the Chinese rice wine, (if you are using), the brown sugar, and the cornstarch and set them aside for frying. 
  • To start frying, heat a wok or a large skillet over high heat.  Add 2 tablespoons of vegetable oil.  When the oil is hot, add the chicken pieces and spread them out as much as possible.  Sear them for 1 minute until the edges are lightly browned, then stir to cook all the sides until just cooked through – say about 2 to 3 minutes more.   Then you can transfer the chicken to a clean bowl, but leave the oil in the wok.  
  • This time, heat the wok on low fire, and when it is hot, add the garlic, the ginger, and the red chili flakes.  Stir fry for another 30 seconds or until they are fragrant.  Then turn up the heat to high and add in the snow peas and the red onion, and then stir them for another 30 seconds.  This time you can add the red bell pepper and veggies stirring constantly for one minute more.
  • Then give a quick stir on the prepared sauce and add them to the wok, stirring them continuously until they thicken, for about 30 seconds.  Add a bit of water if necessary.
  • Add in the chicken back to the wok and toss well, to cook for another 30 seconds.  Turn the fire off and then transfer them to a serving plate. 
  • Serve immediately while they are hot over cooked white rice.

Vegetables have wonderful flavors all of their own and is proven to provide lots of health benefits, which makes it a wonderful and fantastic way of cooking.  As a common knowledge, the vegetables do not only contain the vitamins and the minerals we need, it also contains water and they are a great source of fiber necessary for the body.  The vegetarian stir fry uses no gluten, eggs or dairy making it even the best health meal to eat.

So let us start cooking and taste this tantalizing vegetarian stir fry recipe.

INGREDIENTS:
  • 1 large carrot, peeled and cut into strips
  • 1 onion, peeled and cut into slices
  • 1 piece of red pepper/capsicum cut into chunks
  • 1 piece orange pepper or capsicum cut into chunks (to provide a colorful mix)
  • 2 to 3 inch fresh ginger blended with splash water
  • Tamari sauce (gluten free please)
  • Salt and pepper to taste
  • Olive oil
  • 2 large handfuls of Kale
  • 2 handfuls of Gluten free Pasta
  • ½ cup zucchini cut into strips
  • ¼ cup Turnip cut into small strips
  • A pinch of pumpkin seeds
NOTE: If you love the taste of ginger just add a little more as desired, but if you only like a light taste of ginger, then just add a lesser amount.  If you totally dislike ginger, you can omit it and this stir fry will still taste fabulous.

PROCEDURE:
  • Place your pasta (gluten free) in some hot water on a pan, lightly salted, to soak until they are softened.  Set aside for the stir fry.
  • Heat 1 tablespoon of olive oil in a wok over medium high heat.  As it starts to smoke, stir fry your vegetables starting with the carrots, turnips and onions for about 8 to 10 minutes.  Please do not brown them, cook them just enough to soften them up.  Cook the vegetables first according to their texture of hardness.  
  • Then you can now add your red and orange peppers or capsicums and the zucchini.  Constantly stir fry the vegetables very well.  
  • Rinse your kale in a sieve or colander and then add the, to your stir fry.   Stir fry and add the fresh ginger if you are using.  Toss and stir for about 5 minutes.

  • As you continue stir frying, sprinkle the pumpkin seeds onto the vegetarian dish. 
  • Continue cooking for about two minutes more and then add a few splashes of tamari sauce and a small pinch of salt and pepper to taste, not so much salt though.
  • Serve while it hot.  Great for dinner.  You can also serve it with some braised tofu is desired.

1.    SPICY SHRIMP AND VEGETABLE STIR FRY: The original recipe here can yield four servings for regular people.

INGREDIENTS:
  • ¼ cup low sodium soy sauce
  • ¼ cup sake wine
  • 2 tablespoon sugar
  • 1 tablespoon dark (toasted) sesame oil
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped or grated ginger
  • 1 cup large diced green bell pepper
  • 1 cup large diced onion
  • 1 cup large diced red bell pepper
  • 1 cup cubed cabbage
  • 1 cup sliced carrot
  • ½ teaspoon red pepper flakes
  • 24 large shrimps, shelled and deveined
PROCEDURE:
  • Combine first of the six ingredients, (this is your soy sauce mixture) in a bowl.  Heat a large nonstick skillet over medium high heat.  Add soy sauce mixture and stir fry until lightly thickened, for about 1 minute.   Add the vegetables and red pepper flakes to the pan.  Cook it stir frying constantly until the vegetables are softened for another 1 minute.
  • Then add the shrimps and ¼ cup water.  Cook by stir frying often, until the shrimps are just turning pink, for approximately 2 to 3 minutes more.  
  • At this point you are done, and you can now divide the dish into four bowls.  Serve immediately while it is hot.  This dish is commonly preferred eaten with noodles or steam cooked white rice.   
2.    TERIYAKI SHRIMP STIR FRY: The original recipe serves four people.  Preparation time is 10 minutes and the actual cooking is only 6 minutes.  Try this at home.

INGREDIENTS:
  • 1 pound (500 grams) fresh shrimp or 340 grams packing frozen uncooked, peeled large shrimps.
  • 2 celery stalks, sliced
  • 1 red pepper, chopped
  • 1 small zucchini, sliced
  • 2 green onions, sliced
  • Vegetables oil
  • 1 ½ teaspoon (7 ml) bottled chopped garlic from stores or use 2 fresh garlic cloves minced and chopped
  • 2 teaspoon (10 ml) bottled chopped ginger or grated fresh ginger
  • 3 tablespoon (45 ml) teriyaki sauce
  • 1 teaspoon (5 ml) dark sesame oil
PROCEDURE:
  • If you are using frozen shrimps, rinse under cold water to melt the ice crystals.  Drain them then pat dry.  
  • Prepare the vegetables according to the list of ingredients above.  
  • To begin stir frying, lightly coat a side wok or skillet with vegetable oil.  Set over medium high heat in your western stove.  Once starting to smoke, add the celery, the peppers, and the zucchini cuts.  Stir fry until the peppers starts to soften for about 3 minutes.  
  • Add the shrimp, the garlic and the ginger.  Continue stir frying until the shrimps turn pink, for about 2 to 3 minutes.  
  • Then add the Teriyaki sauce and the onions.  Stir and toss if you can until hot for about 1 minute.  
  • Once done, drizzle with the dark sesame oil and serve while it is hot immediately. 
  • Wonderful to go with white steam cooked rice.

1.    VEGETABLE STIR FRY WITH HONEY GARLIC SAUCE: We have taken this somewhere from a scratch but you could just buy a jar of honey garlic sauce and use as much as you want.  We can utilize a bunch of vegetables in the fridge that are no longer part of a main dish, which means your veggies can really vary according to your stock.

INGREDIENTS:
  • The sauce:
  • ¾ cup brown sugar, packed
  • 2 tablespoon cornstarch
  • ¾ cup water
  • 3 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 cloves of garlic, chopped (or use 2 tablespoon garlic powder)
FOR THE RECIPE, THE VEGGIES:
  • 1/23 large red onion, diced
  • 2 large carrots, chopped into thin slices
  • 1.5 stalks broccoli (use the flowerets, not the stalk)
  • 1 yellow pepper
  • ½ green pepper
  • 1 red pepper
  • 2 stalks celery
  • 2 cloves garlic
PROCEDURE:

  • Put white rice on your steamer to cook for about an hour, timed before your dinner is ready since it takes awhile to cook the rice.
  • Chop vegetables on how you like it for the stir fry.
  • Spray large frying pan with cooking oil, add onion, carrots and garlic, cooking for about 5 to 10 minutes until the carrots are semi-soft, or crisp tender.
  • Then add the rest of the veggies, cooking for another 10 to 20 minutes or until they are soft, and reduce the heat. 
  • In another sauce pan, you can now mix the brown sugar and cornstarch, and then add water, the soy sauce, the honey and garlic.
  • Heat the sauce until it boils and then reduce the heat to medium low till it simmers for 2 minutes.
  • When the sauce is ready, add it to the vegetables (all or just some).
  • Serve with the brown rice while it is hot and makes 4 to 6 servings depending on how you eat.
